TOTT loves a good party and we are always ready to bring our clients’ events to the next level! We got to do just that when Kathleen and Rob Ernst hosted a luau-themed party for Kathleen’s 40th birthday – which also coincided with the couple’s 14th wedding anniversary!

All the couple had to do was make a call to TOTT and we were on the case and more than ready to make this celebration as delicious and fun as it could be! Fully embracing this great summer theme, we looked for all the special ways that to incorporate details to make the event really have that South Pacific vibe – from the deliciously tropical specialty cocktails and service decor to the Hawaiian shirts worn by our event staff!

The clients selected an array of delicious items to be served by three of our fun-loving and gracious TOTT team. The completely customized menu included:

  • Mini Kalua Pork Sliders with Mango Jicama Slaw
  • Aloha Meatballs filled with Grilled Pineapple, Roasted Peppers and Onions – Served in a Sweet and Tangy Demi Glaze
  • Island Shrimp and Pineapple Skewers Served with Sweet Chili and Coconut Sauce
  • Smoked Salmon Cucumber Salad Finger Sandwiches
  • Sesame Crusted Pan Seared Ahi Tuna and Seaweed Salad on Wonton Crisps Served with Sweet Chili and Wasabi Mayonnaise
  • Coconut Cashew Rice with Cilantro
  • Balsamic Grilled Asparagus with Feta, Cherry Tomatoes and Lemon Oil Vinaigrette
  • Watermelon and Heirloom Tomato Salad Dressed with Feta and Candied Pecans Served Over Assorted Baby Greens and Finished with Basil Vinaigrette
  • Mini Caprese Skewers with Basil Vinaigrette and Smoked Sea Salt
  • Seasonal Fruit Skewers with Coconut Cream

And, to top it all off, Rob treated Kathleen and their guests to a gorgeous and beautiful cake from the Cake House on Main
