OUR CULINARY
PHILOSOPHY

Talk of the Town has a simple but powerful word for our culinary philosophy. Integrity.

We believe that food nourishes body and soul. Our supply sources are so important we travel to the origin of where our food is produced. We have been to Costa Rica on the farms that produce our coffee. California where they grow much of our produce. Maine where we source our mustard, lobster, and sea salt. Several parts of middle and south Georgia where we get our quail, pecans, tomatoes.  North Georgia where we source our apples and our peaches.

THE ORIGIN OF OUR INGREDIENTS

Why do we visit these places? The people who grow our food are just as important as our clients. These growers, harvesters, and producers are honored members of our extended team. They are families that hold our deep respect for creating their products with care and passion.

These producers feed their products to their family, friends, and community. This is the same for my family and friends. I take pride in having the ability to make dinner for my family from ingredients that we use for you. You will never see a compromised product or substandard quality in our coolers or pantry. Our menu items and descriptions are never misleading. Talk of the Town takes pride in our food.  We proudly display the GA Grown emblem on our signature line and website.

RESPECT
FOR OUR CAREFULLY SOURCED INGREDIENTS

So how do we handle our wonderful ingredients? Our culinary team is trained to receive, inspect, and properly store our treasured fare from the moment it enters our kitchen. When we cook, our ingredients are treated with respect and reverence. Our chefs minimally process and season only to enhance. The flavor profiles that have been created for our menu are not overly complex or confusing, but elevate the star of the plate.

EXQUISITE FLAVOR PROFILES

While we may use unusual flavor combinations like vanilla in our lobster stock or basil with hibiscus, these combinations have a way of complementing each other. Our team utilizes traditional methods of preparation while adopting modernist techniques when it makes sense. Yes, we do use nitrous in pressured canisters for some applications as well as sous vid for others but only because we have figured out what ingredients will turn out the best possible final product by using certain cooking methods.

THE BEAUTY OF OUR MENU

How do we create the menu items? By listening to you, our clients!

So many of our menu items are familiar and I would consider them comfort food. A bite of grilled cheese and sip of tomato soup can bring back memories from childhood. Our beef bourguignon can transport you to Burgundy France if only for a moment. When you take a bite of our etouffee and hushpuppy while closing your eyes, you can hear the Zydeco band playing in your head. We are constantly asked to produce custom menus to include a family favorite, like chicken pot pie. Or the client may want to push the culinary envelope and request off the wall items like nitro avocado ice-cream or pickled quail eggs with arugula pesto.

BREAKING BREAD TOGETHER

Our dedication to serving our guests the best quality possible is what has earned us our reputation of one of the best caterers in the Atlanta area. We will continue to strive for improvement by constantly researching new food items, ingredients, techniques, and education. The commitment to our guest’s satisfaction will continue to shine.

Please feel free to contact me directly at anytime to discuss how our culinary team has taken the necessary steps to guarantee your meal is the best it can be. Breaking bread is a tradition that builds bonds and connects individuals not just at the table but also from the earth, farmer, and chef to nurture our body, mind, and soul.
