Our very own Chef Andrew Brackner is not afraid to admit he loves many of summer’s delectable produce offerings, but the tomato might just be his favorite. He offers our clients so many incredible tomato-featured menu selections because he and the rest of the Talk of the Town culinary team have endless ways to showcase this jewel of summer.
Chef Andrew says he uses heirloom tomatoes as much as possible. For those who do not know what that means, an heirloom is a “true tomato” and not a genetically-modified version that has lost flavor, color or other qualities along the way for the purposes of make it simply easier and cheaper to grow.
OK, back to the tasty stuff . . .
Some of the varieties we prefer are:
- Black Krim
- Brandy Wine
- Green Zebra
- Cherokee Purple
- Early Girl
Chef Andrew recommends treating your tomatoes as follows:
- Avoid refrigerating your tomatoes if possible to keep their flavor and aroma intact.
- You can blanch, peel and freeze or can your beautiful tomatoes to have on-hand for colder months when heirlooms aren’t available.
To enjoy your tomatoes, you can make one of Chef Andrew’s favorite salads by combining:
- Sweet Watermelon
- Heirloom Tomatoes
- Feta Cheese
- Arugula
- Candied Pecans
- Light Basil Dressing
