Who better than to dish out the delicious secrets of TOTT’s incredible weddings, corporate events, and private parties than one of our own amazingly talented culinary staff! Rick Smith, our Sous Chef, spares a few minutes of his time to sit down and answer our Staff Seven questionnaire!

TOTT: You have a hand in so much of TOTT’s delicious food. What are your personal favorites?

Rick: You can never go wrong with simple Salmon and Grilled Asparagus, but I also really enjoy our Great South BBQ’s Smoked Chicken or Pork, our famous Mac ’n’ Cheese and Broccoli Casserole!

TOTT: What about when a client wants something really creative to wow guests?

Rick: Candied Bacon and our incredible Shrimp ’n’ Grits make guests say “Wow!” every time.

TOTT: You work really hard here. What’s your favorite way to spend a much-deserved day off?

Rick: I like to kick back, watch some superhero cartoons and listen to old school R&B!

TOTT: Do you have any pets?

Rick: Yes! A cat named “Sassy.”

TOTT: And what is your dream vacation destination?

Rick: Beale Street in Memphis, TN. Food and music all wrapped up in one!

TOTT: Do you have a favorite North Georgia event?

Rick: I love the New Year’s Eve party at the Dalton Depot.

TOTT: What is your favorite part about being part of the TOTT team?

Rick: My favorite part of working at TOTT is working with the other chefs. I’ve learned much from them and we have a way of continually making things more and more creative here and for our clients. It makes it both fun and challenging!
