Well, garlic is one fascinating ingredient!  Chef Andrew has a fantastic relationship with the great folks at Rock Star Farms and was able to get some amazing varieties of this delectable member of the onion family! Each has its own special flavor, lending itself to certain dishes that Chef Andrew and the rest of the Talk of the Town culinary team can’t wait to create just for you!

“My friends at Rock Star Farms have finished drying the garlic! They gave us four varieties to try:

I am having fun tasting each and separating out the unique traits for different purposes!

  • The Bogatyer is going to be roasted for use in our roasted potatoes and roasted garlic cream sauce for pasta.
  • The Purple Glazon has a rich garlic flavor but is more sweet than spicy, I’ll use that one for chicken marinades.
  • The Cali Early White has a well rounded balance of spice and sweet, I’ll use that for grilled veggies.
  • The Purple Italian seems to be a little spicy compared to the others, I’m going to use this for the tomato feta bruschetta.”
