It’s no wonder our clients and their guests are consistently saying how much they enjoy the cuisine prepared by our team. Under the leadership of Chef Andrew Brackner, each of our culinary staff is exposed to the classic dishes and the latest trends – a perfect blend of old and new that gives innovation and that extra something wonderful to our catered events! Chef Andrew just returned from a summer trip that mixed business and pleasure! While some of us lazed by the pool or caught up on summer reading, our chef undertook a culinary journey.
First, he attended a culinary conference in Louisville, KY. There, he got to work and play with chefs from across the country and even participated in several cooking challenges. It was a great learning experience that allowed him to bring home great new ideas for our clients!
From there, he headed to Maine where his family has a lake home. But, like any good chef, he spent plenty of his vacation time seeking out the culinary delights of this New England food haven. Chef Andrew visited Rayes Mustard in Eastport, ME – the only stone-ground, cold-pressed mustard mill in the United States. Talk of the Town Catering & Special Events proudly uses three gallons of this specialty product a month four our catering clients and Chef Andrew was more than happy to get to sample some of their latest new flavors. He also got to visit and tour sea salt evaporation tents where the finest salt is produced, much of which we use here at Talk of the Town!
Chef Andrew would not miss out on a chance to get his seafood fix in Maine, so he made sure to visit the farm that raises the very salmon that we serve our clients for special events! And, he spent time with local lobster men to talk about market trends and the future of this valuable crustacean. He even donned his gloves to help process about 50 lbs of salmon! And, since it was summer in Maine, our chef picked his own wild blueberries, blackberries an raspberries!
